This recipe for Baked Avocado with egg & Soldiers is so creamy and delicious! Perfect for a weekend brunch treat! Also a really yummy alternative to your standard egg and soldiers. I could eat it again already!
Ingredients
Serves 1 as a meal or two as a snack
1 ripe large avocado
2 free range eggs
2 slices of toast
Olive oil to drizzle over the toast
a few sprigs of fresh parsley
Chilli sauce to drizzle
Salt and pepper to taste
Method
Preheat the oven to 190°C/375°/gas mark 5
Slice the avocados in half leaving the skin on and carefully remove the stone.
Scoop out some of the avocado to allow space for the egg, season with a sprinkle of salt and pepper, then break a whole egg into each avocado half.
Place in a small baking dish and put into the preheated oven for 15 minutes.
Remove and serve with fresh toast cut into slices drizzled with olive oil and some hot sauce and the parsley.
Tip: To add a little crunch, boil a small portion of chopped cabbage, drained and added hot sauce.
If you are looking for a chilli sauce without sugar I highly recommend Baron Blazing Hot Sauce which I buy from Taj Supermarket in the UK, but keep a look out for it.
