Carrot and Coriander Soup

Ingredients

Serves 4

1 tbsp Coconut oil

1 onion roughly

6 large carrots ends chopped of, washed and roughly chopped (no need to peel)

1 litre vegetable stock

salt and pepper for seasoning

half bunch of coriander

freshly grated nutmeg to garnish

Directions

heat the oil in a large pan on a medium to low heat and add the onion once hot.

After 2/3 minutes add the carrots and a pinch of pepper stir to coat them in the oil and heat for another three minutes continuing to stir.

Add the stock and bring to the boil.

reduce heat and simmer for 20 minutes. Check the seasoning and add to taste.

take off the heat and tear off the coriander leaves and add just before you are ready to blend.

once blended pour into a bowl and serve with freshly grated nutmeg.
