Hummus is a dish I have been making for years, but I was only comparing it to the hummus you would in English supermarkets. It was not until moving to the Middle East I realised how nice, smooth and creamy it should be. I asked several times in middle eastern restaurants how they were preparing theirs to see were I was going wrong and they would all say the same thing, until one day in Jordan the waiter mentioned that the garlic is roasted! Oooh, so that was were I was going wrong! Finally I have now tried my recipe with roasted garlic and it makes all the difference! I did have to play around with the roasting times for the garlic as it can vary from oven to oven. Fingers crossed this recipe works for you…
Ingredients
Olive Oil
1 tin 400g chick peas drained, reserving 4/5 for garnish. Keep a little of the water aside in case needed
4 cloves of garlic unpeeled
1 tablespoon tahini
lemon juice to taste
1 level teaspoon of cumin
pinch of salt
Fresh parsley leaves for garnish
Zumac for garnish
If you would like to serve it like the delicious picture above you will need 1/2 slices of toast per person and half an avocado per slice of toast.
Method
Preheat the oven to 220°C/425°F/gas 7
Place unpeeled garlic cloves in the middle of a large square of aluminum foil. Drizzle cloves with 1 tablespoon of olive oil and wrap the foil. Roast in preheated oven for 15 minutes until golden brown. Remove from the oven, and allow to cool. When slightly cooled, squeeze roasted garlic out of peels.
Squeeze the roasted garlic out the skins discarding the skins and mash into the tahini until you make a paste, then combine, lemon juice, chick peas, cumin, salt, and the remaining 1 tablespoon olive oil in a food processor. Blend until very creamy. Taste for seasoning and add more if needed. If the mixture is a little thick add some of the water from the chickpeas.
Spread on toast and enjoy with sliced avocado and maybe even a dash of chilli sauce.
If you are having as a dip serve in a bowl. Make a slight dip in the hummus and add the reserved chickpeas, sprinkle the sumac decorative and place parsley leaves to look pretty. Enjoy with some nice warm arabic bread or crudités.
