This Mango Lassi is a must try if you love mango as much as I do.
I think that mango is often an underused fruit in the UK, which is a shame as it has several health benefits.
Known benefits of mangos:
Help lower cholesterol as it is high in fibre, pectin and vitamin C.
In just one large mango (the amount in this recipe) has 25{b4b97137fd3820ff95b576e7e35435e217a5d88726ffa53d0e4e81a46746e540} of your suggested daily vitamin A, which promotes healthy eyes and seeing in the dark.
Is fairly low glycemic index (41-60) which means it is ok for diabetics in moderate quantities.
They are a rich source it vitamin E containing enzymes that help breakdown protein. The fibre also helps digestion and elimination.

It is also an immune booster due to the amounts of vitamin C and vitamin A, plus various kinds of carotenoids that help maintain your immune system.
This recipe is for a vegan mango lassi, however, you can replace the vegan substitutes for normal yogurt and milk.
Ingredients
Serves 1
Flesh of 1 mango
1 tablespoon of yogurt – I use coconut yogurt from www.coconutco.co.uk
80ml milk Kefir
3 ground cardamom seeds (optional)
6 ice cubes
Method
Blend all the ingredients together well. I use a stick blender, but any blender will work. If you find that you want the lassi cooler or warmer adjust ice to your liking
Enjoy in a nice glass with a straw 🙂
