Poached egg, bacon and Avocado

Ingredients

Serves 1

English muffin

half an avocado

1 free range egg

2 rashers of streaky smoked bacon

garlic

olive oil

salt and pepper

Directions

Have a large pan of simmering water ready. Start by grilling the bacon about 4/minutes each side. Whilst that is cookin prepare the avocado by cutting into thin slices and set aside. When you turn the bacon over start poaching your egg for 4 minutes. I find it easiest to break the egg into a cup first. Toast the muffin and rub the rough side with the clove of garlic and drizzle with olive oil. Now place the avocado over the muffin top with bacon and place the poached egg on top. Season to taste
