I love how us British will take on certain European dishes and add it to our repotoir of top English dishes. Sadly the dish gets lost in translation. The recipe below will not remind you of any one time in Italy; sitting along the Almalfi coast drinking Italian wine enjoying the sea view or out for dinner enjoying a historic view in Rome, no! However, this Spicy Lamb Meatball recipe is delicious and I highly recommend giving it a go. This recipe is bursting with flavours and I really enjoy everytime!
Ingredients
Serves 4
3 tbsp white breadcrumbs
2/3 tbsp milk, to soak
2 tbsp olive oil
2 onions, peeled and finely diced
2 garlic cloves, finely grated
1 red chilli, finely chopped
Glass of white wine
2 x 400g tins chopped tomatoes
Small bunch of basil
1 tbsp chopped oregano
Sea salt and freshly ground black pepper
500 g minced lamb
3 garlic cloves, peeled and halved
½ bunch of parsley
2tsp of chopped fresh rosemary
2 tbsp freshly grated Parmesan, plus extra to serve
Flour, to dust
1 tbsp olive oil
Directions
Preheat the oven to 180°/gas mark 4. In a small bowl add the breadcrumbs and the milk and leave to soak.
In a frying pan heat on a low heat add the olive oil and fry the onions gently for around 5 minutes, add the garlic and chilli and cook for another 2-3minutes. Turn the heat up and
add a the white wine, bring to the boil then add the tinned tomatoes basil, simmer for 10 minutes to reduce and thicken.
For the meatballs: add the minced Lamb into a large bowl and add the garlic, parsley and Parmesan. Squeeze the breadcrumbs to remove excess milk, then add to the bowl. Mix well, using your hands, and season with salt and pepper.
Shape the mixture into balls, the size of a £2 coin, and dust in flour. Heat the olive oil in a large frying pan on a medium heat. When hot, fry the meatballs until golden. Cook your spaghetti as per the instructions. Add the meatballs to the tomato sauce and then transfer to an ovenproof dish. Bake in the oven for 10 minutes. Discard the basil.
Serve with grated Parmesan and an avocado mixed leaf salad on the side.
