Spicy Tomato Juice

Wow! What a different product to what you will find in the supermarkets. I always thought I like tomato juice until I tried making it myself. Now I know that I love tomato juice. This is my new favorite recipe at the moment! It is so fresh and tasty. You can adjust the the spice to suit your liking and makes an excellent mix for an amazing bloody Mary. In this recipe I have not used any sugar as I though it is delicious enough without.

Ingredients

Serves 2

600g Tomatoes

1 stick of celery

4-5 leaves of basil

Pinch of cayenne pepper

Pinch of Himilayan salt

Place all the ingredients in a blender/food processor and blend thoroughly. Sieve using a standard sieve pushing as much pulp through as possible. This method gives you some of the pulp giving the drink yummy texture.

Keep stored in the fridge

Use with 72 hours.

Tip: With the remaining pulp I add it to make tomato soup.

To make the ultimate bloody Mary Ice to a glass, and poor in 50 ml vodka. Add a squeeze of lemon juice over the ice a splash of worcestershire sauce, a couple of splashes of tabasco, a couple of turns of the pepper mill, and a pinch of celery salt.

Pour in the tomato juice and stir through.

Garnish with celery and a lemon wedge.
