Hooray for cake days 😍🍰
This banana bread is so easy and delicious. It only takes around 5 minutes to prepare and then you can relax with a nice cup of tea or get on with something else for the next hour whilst the oven does all the work. It is also a great way to use up overripe bananas
Ingredients
4 very ripe bananas (1 extra if you would like to decorate like the picture)
1/2 teaspoon of vanilla bean paste
4 tablespoons of maple syrup or Xylitol
115g (1/2 cup) butter
2 free range eggs beaten
225g (1 1/2 cup of flour)
1 teaspoon of baking soda
1/2 teaspoon of salt
60g of walnuts broken into pieces. Plus extra to decorate.
Method
Preheat the oven to 180°/350/gas mark 4.
Start by mashing the bananas well and add the vanilla, agave syrup, butter, eggs and mix together.
Sieve the flour, baking soda and salt into the mixture and add the crushed walnuts.
Using a loaf tin lined with greaseproof paper pour in the mixture. Scatter the extra walnuts and if using a couple of banana pieces sliced lengthways and gently placed in a decorative position.
Place in the oven and bake for 1 hour.
Once removed from the oven allow to chill on a wire rack.
Tip: if you would like to add to the flavour either add a teaspoon of cinnamon or it also works really well with a shot of espresso ☕️ for coffee flavour.
